Today, I’m sharing the very first recipe on my blog – a rich, delicious and royal dish: Kaju Matar (Cashew Peas Curry). This flavorful North Indian curry made with green peas and golden roasted cashews is perfect for special occasions, guests, or festive meals. Let’s dive into the recipe!

Cashews ½ cup (lightly roasted)
Green peas 1 cup (fresh or frozen)
Onion 1 medium (finely chopped)
Tomato 2 medium (pureed)
Green chili 1 (finely chopped)
Ginger 1 tsp (grated)
Oil or Ghee 2 tbsp
Turmeric powder ¼ tsp
Coriander powder 1 tsp
Red chili powder ½ tsp (adjust to taste)
Garam masala ½ tsp
Salt To taste
Fresh coriander 1 tbsp (chopped, for garnish)
👨🍳 Method (Step-by-Step Instructions)
🔸 Step 1: Roast the Cashews
Heat 1 tsp oil in a pan and lightly roast the cashews until golden brown. Remove and set aside.
🔸 Step 2: Sauté the Onion
In the same pan, add chopped onions and sauté until they turn golden.
Add grated ginger and green chili. Sauté for 1 more minute.
🔸 Step 3: Add Tomato and Spices
Add tomato puree to the pan. Add turmeric, coriander powder, red chili powder, and salt.
Cook on medium heat until the oil starts to separate and the masala thickens.

Add the green peas and ½ cup water. Cover and cook for 6–7 minutes or until the peas are soft.

Add the roasted cashews and garam masala. Cook for another 2–3 minutes on low flame to blend all flavors.

Turn off the heat. Garnish with fresh coriander leaves. Your creamy, royal Kaju Matar is ready to serve!
